Chili Kartofler (Danish Potatoes)
Simple & fast Danish potatoes created as a perfect spicy accompaniment with a strong fish, meat or veal main dish. Great use of fingerling or red russet potatoes. Spice can be omitted as desired.

Ingredients:
- 2 lbs of potatoes (red russet, fingerling, or other)
- 1/2 cup butter
- 1 large onion, sliced
- 1 tablespoon granulated sugar
- 1 tablespoon vinegar
- 1 teaspoon salt
- 1 teaspoon red chili flakes
- Dash of white pepper

Instructions:
Boil potatoes. Cool, peel and slice 1/4-inch thick. Set aside.
Melt butter in frying pan. Add onions, red chili flakes and saute for 5 minutes, stirring occasionally. Add potatoes. Saute for 5 minutes, turning potatoes to brown both sides. Season as desired.
Add remaining ingredients. Cook for 5 minutes longer.
