Traditional Greek Salad

This no-frills salad is as delicious as it is simple. A staple on the islands and mainland of Greece, this rustic, traditional salad can be found in fine restaurants and on family dinner tables alike.

Ingredients:

  • 1.5 pounds of the tastiest tomatoes you can find
  • 2 cucumbers
  • 2 green peppers
  • 1 large white onion (may substitute for red)
  • 1/2 pound or more of good feta cheese (KOLIOS brand is our family favorite)
  • 1 handful greek olives (any type; kalamata is traditional)
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 2-3 pinches oregano
  • Salt and pepper to taste

Instructions:

During preparation, keep in mind the rustic nature of this salad. Cut the tomatoes roughly into wedges, chop the cucumber into disks, and slice the onion and green pepper. Add all to your bowl. Salt and pepper to taste. By hand, break the feta up into chunks, and toss into salad. Add olives, oil, and vinegar. Sprinkle on the oregano.

Toss and serve with toasted crusty bread, and your meal.

This is really good I have been using it for awhile, I do omit the salt this way I control how much salt that I put in my dishes.

I'd like to try this with a little powdered cornmeal lightly dusted towards the end of the broiling. Great basic recipe!
