Thai-inspried Seafood Soup

A thai-inspired seafood soup, slightly spicy, creamy and tangy in one cacophony of flavors.

Ingredients:

  • 1 can of Unsweetened Coconut Milk
  • 2 cups of Chadonnay or other white wine
  • 4 small to medium Blue Crabs
  • 1/2 cup mussels (in shell or not)
  • 1/2 lb large shrimp (15-19) with head attached
  • 2 Tblsp Red Curry Paste
  • 1 Tsp Sugar
  • 2 Limes, juiced
  • 1 bunch fresh cilantro, chopped
  • 6 cloves Fresh Garlic minced
  • 1 large carrot large sliced
  • 1 large onion large sliced
  • 1 bunch spring onions sliced
  • 1/2 c Peanuts chopped

Instructions:

Mince and saute the garlic in a 1/4 cup of olive oil. Then add the coconut milk, lime (juice), wine, salt and curry paste and bring to a boil. While boiling, add sugar to taste. When reduced by 1/6th, add the crab and mussels along with 1/2 bunch chopped cilantro. Add a lid and steam for 10 minutes, then add shrimp. When the shrimp is nearly cooked, add cilantro, sliced carrot, sliced online for 5 minutes until settled. Garnish with Cilantro and lime.

This is really good I have been using it for awhile, I do omit the salt this way I control how much salt that I put in my dishes.

I'd like to try this with a little powdered cornmeal lightly dusted towards the end of the broiling. Great basic recipe!
