Simple Greek Village Salad

I believe in the power of fresh ingredients and a good blend of flavors. A simple Greek Village Salad has the ability to refresh the hottest of days and is the perfect accompaniment with some flat bread I can toast or a bit of sliced lamb. Sometimes if I have some laying around, I'll spice it up with some caper berries or finely minced and rinsed jalapeno pepper.

Ingredients:

  • 2 cucumbers, cut into 1/2-inch cubes
  • 2 pounds tomatoes, cored and cut into 1/2-inch cubes
  • 1 medium red onion, chopped, then rinsed and drained
  • 1 1/3 cups coarsely chopped parsley
  • 1 1/3 cups drained pitted kalamata olives, halved if large
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup lemon juice
  • 1 1/2 teaspoons dried oregano
  • 1 pound feta cheese
  • Salt and fresh-ground pepper

Instructions:

In a large bowl, combine cucumbers, tomatoes, onion, parsley, and olives.

In a small bowl, mix olive oil, lemon juice, and oregano.

Break feta cheese into about 1/2-inch chunks and add to cucumber mixture. Add dressing and mix gently, adding salt and pepper to taste.

This is really good I have been using it for awhile, I do omit the salt this way I control how much salt that I put in my dishes.

I'd like to try this with a little powdered cornmeal lightly dusted towards the end of the broiling. Great basic recipe!
