Corn on the Cob with Spicy Lime Butter

Grilled corn, perfect. On the cob with a spicy lime butter that makes this a memory worthy of the summer.

Ingredients:

  • 4 ears of corn, unhusked
  • Spicy Lime butter
  • 8 tablespoons (one stick) unsalted butter, softened
  • Grated zest of 1 lime
  • Chili powder, with finely chopped jalepeno pepper.
  • Salt to taste

Instructions:

To make the butter, mash the butter, lime zest, and chile in a small bowl with a rubber spatula until combined. Season with salt to taste. Baste some of the mixture on the corn during the grilling.

Transfer the butter to a serving bowl and set aside at room temperature. Place the corn on the grill and cover. Grill, turning occasionally, until the husks are charred on all sides, about 20 minutes. Transfer the corn to a platter. Using a clean kitchen towel to protect your hands, strip off the husks and silks. Serve hot, with the butter passed on the side.

This is really good I have been using it for awhile, I do omit the salt this way I control how much salt that I put in my dishes.

I'd like to try this with a little powdered cornmeal lightly dusted towards the end of the broiling. Great basic recipe!
